Sam you have no idea how envious of you I am. I have been building bigger papercrafts for a bit but am limited to my printer size. I am sourcing print shops to make larger ones such as yours but the price is soooo high for me it's disappointing($245!). I am hoping to at least get a template made and then source free cardboard to create the papercrafts in order to be more cost effective. I even considered getting a job at a print shop just to do this but they aren't hiring at any of them. Oh well.
